Pumpkin Bread Photos

This is another favorite from The Allergen Free Baker’s Handbook by Cybele Pascal (amazon affiliate link).  I don’t follow the recipe exactly (I usually omit the pumpkin seeds, for example) but recently I started adding some of Enjoy Life’s “not nuts!” Beach Bash trail mix (amazon affiliate link, it contains Raw Sunflower Kernel; Pineapple*; Roasted Huled Pumpkin Seeds (Sunflower Oil (Sunflower Oil, Citric Acid), Salt); Cranberries*; Apricots*, I don’t let R have any because he’s too little and I think he has an issue with apricots but I digress).  The other varieties of the trail mix have raisins and E can’t have grapes but this mix is great.  My husband mixes it with Enjoy Life chocolate chips.  The seeds give a great chew to this bread and I added turbinado sugar (wikipedia describes it as “Natural brown sugar“) on top to give it an extra sweetness and sparkle.

This is one recipe that is great with either guar gum or corn free xanthan gum.  It has no specific egg replacer because the pumpkin fills that role nicely so to me it is a really unfussy recipe.  Breakfast with slices of pumpkin bread is a treat and when your diet is limited there is no reason to wait until the fall to fill your home with the smell of pumpkin bread.

E calls it “pummie bed” and, like most words she uses, I find myself adapting my speech to hers instead of the other way around.  Her words are usually more fun to say!
